Why the gelatin? Once you prepare the jigote or filling you place it in the fridge overnight, by the time you use it the following day it’s already firm without the need of gelatin! Am I wrong?? 🤔

You don't have to use a sauce pan to make simple syrup. Use a electric water pot. Put the sugar in a large bowl, heat the water to a boil and pour the hot water over the sugar. Stir until clear, and you have simple syrup.

I lived in Bolivia for 1.5 years but never had an arepa there. What is something similar to a Venezuelan arepa is a cheese bread called cuñapé that’s made with cassava (yucca) flour. It’s such a treat to be invited over for cuñapé and to drink mate de Yerba from a poro (dried gourd). 😋 I’ve made both arepas and cuñapé since being back to USA but what I miss the most is the fresh cheeses that are made in Bolivia (and other countries). Nothing compares or can be found than what’s done by hand out in the countryside and Amazon. Thank you for sharing your recipes with all of us. 🤗🌸🌼

I've never made it without PAN, but I believe you can use white cornmeal as long as it's pre cooked. I don't think you'll get the right consistency if you use uncooked cornmeal. Good luck! I hope it works out 🤗

Can you make this without a blender? I see you have HEB cheese so you must live in Texas...is that where you got the Aji sauce?? I want to make this by tomorrow so i can't order anything online since it'll take 3-5 days.

The blender is key to making the sauce smooth. We found the aji amarillo at Poco Loco. Hopefully you have one nearby or check other Latin grocery stores.

Thank you so much for this video and recipe! Everything is currently cooling in the fridge and I’ll be finishing them up here in a couple of hours. A had a couple of questions as I was working through the steps. Is it 1 tsp or tbps oregano? For the 2 cups water when making the masa, is that just an estimate? I didn’t come close to 2 cups, it was more like 1-1/2 for me. Again thank you so so much! Can’t wait to try them! ❤

I'm so glad you're making salteñas! You're going to love them 😊 My mistake in the description. It should be 1 tbsp of oregano. I just changed it. And for the masa, it's just an estimate. Go off of how it feels. I'd love to hear how they turn out!

@@cookingwithcarino so lessons we’re learned 🥲 They looked great until I baked them. For the ones that weren’t frozen, it seemed like the dough didn’t cook and instead just melted and fell apart. I had some more that were in the freezer (but not yet frozen) and they baked better, but still not great. I assembled what I had left this morning. Made them smaller and didn’t roll the dough as thin. They look better. I’m going to freeze them fully and bake from frozen. I guess we’ll see! Flavor of the dough and filling were both excellent. Just was missing some salt overall 😊

I didn't put any salt because the bouillon has a lot. You can add some to your liking.
