Peruvian Aji De Gallina (Chicken Stew) Is Easier To Make Than You Think! Ultimate Comfort Food! 🇵🇪

This Peruvian dish is near and dear to our hearts! We’ve been making it for the past 11+ years and this is the best recipe we’ve come up with. It’s the ultimate comfort food!
Here’s what we used in the video:
4 chicken breasts
2 bolillos or French rolls
8 saltine crackers
¼-1/3 c shredded/grated parmesan cheese
1 white onion
2 garlic cloves
About 7 gold potatoes
4-5 tbsp aji Amarillo with 4-5 tbsp veg oil
1 tbsp turmeric
1 tbsp salt
A pinch of pepper
1 - 12 oz can evaporated milk
*2 tbsp caldo de pollo (bullion powder)
White rice
*You’ll need to reserve about 3 cups of the chicken broth
