From what I gathered from another video you have to cook the olive meal before squeezing (other video said 5-10 minutes on medium). I also believe you want to primarily use green olives.

A few days at room temperature but if you put it in the fridge, it'll last up to a week!

Green(unripe) olives are for oil, black(ripe) are for eating.

There's no difference. Both can be used for oil. Green olives are just unripe black olives. Although black olives are ripe, both need to be cured to be edible.

I l❤ your backyard Orchard and the variety of fruit trees you have. Your nectarines and Asian pear trees doing so great! Can you share what you are doing to deal with any possible insects or pests? I'm having challenges with tree borer and tent caterpillars with my nectarine and plum trees.

It's a cherry pitter! I got mine on amazon but you can get them at places like Target, Walmart, BB&B, etc. The one I have is oxo brand I believe.

What speed do you have your mixer on? And do you have it on the same speed for the entire duration of 8-10 minutes? I feel like I over knead my dough in the mixer every time 😭

I would recommend you leave it on the 2nd notch which is just above the low speed! Pretty much the same speed the whole time except when you're checking on it.
