When using the leaf veiner the vein imprint centre is very deep and almost dislodged the wire I have tried only pressing the sides but the result isn’t very pleasing

It definitely takes practice to learn the right touch. I press very firmly but I usually avoid the center line. My leaf wires regularly get dislodged and I just retract them and reinsert - no big deal. Again, practice makes perfect!

Beautiful and a great video. I’m making deep red roses for my granddaughter 21st cake. What colour powder dust would you suggest for the petal edges. I have made a darker deep red petal dust for the inside of the rose. I would appreciate your advise

Thank you! Glad you enjoyed it. When I make deep red roses, I always begin with deep crimson paste. So the edges of the petals would end up crimson anyway, and the center of the rose (and base of each petal) would be dusted with deep burgundy. I love any of the deep red dusts by CK Products for this, as they’re very saturated and they adhere well to gumpaste.

When you use it in a cake, can you have floral tape in a cake? I’m hesitant to try

It's typical for us to put the floral tape-wrapped stems into a posy pick or straw before inserting into the cake. Some cake designers (like Finespun Cakes, whose work we love) do stick floral wire-wrapped stems into the cake directly. It's a personal preference. Floral tape is a type of crepe paper that's been waxed, so it's non-toxic. I personally think it's a lot worse to stick FRESH flowers into a cake, which have pesticides and other chemicals sprayed onto them and which contain all sorts of natural toxins that aren't safe for people to eat. And yet fresh flowers get stuck into cakes ALL the time. In my view a taped wire is a lot more sanitary and food safe than that... :)

We store our flowers in large, lidded plastic bins lined with compostable packing peanuts, and a couple of packets of silica gel tucked inside to absorb any excess moisture. Hi Carla, loved the video for making roses with an added row of wired petals. Wondering if I can ask for some help with the wired petals...my wires don't seem to have attached/glued to the petal and consequently are spinning around and one I could even pull off after having taped them all together. I used the same size wire that you suggested and let them dry overnight. Would you have any other tricks you could pass along. Thank you so much, Debra

Hi Greg, sorry you had issues with the wires. Did you use cloth-covered floral wire? Or was the wire bare? Without the cloth, there's nothing for the sugar to grip onto. Also, if you dipped your wire and then didn't wipe off excess before inserting it into the petal, it may have been too wet -- this can affect the grip as well. (A damp wire sticks to the gumpaste better than a wet one.) Finally, you'll see in the video that I always pinch the paste carefully at the point of insertion, to ensure that there is a little bit of paste extending down from the petal and onto the wire. This is the best practice to guarantee good adhesion!

Yup, that’s correct. They’re sprinkled with dried lavender buds but they don’t have lavender in the macaron batter itself. Lavender is a flavor that needs to be handled with care and restraint, or it can easily taste soapy. (Not good.) So we just assign the lavender to the filling!

I tried doing wafer paper, but must be getting my petals way to wet because they just stuck together. I just laughed and walked away. Definitely plan on trying again! Your videos are aleays so good. Will rewatch and give it a go!

Ha, that sounds like my first few experiments with wafer paper! Yeah, it definitely takes practice to figure out how much moisture to apply to the petals -- and it's not nearly as much as you'd think! I find it helpful to use a flat wide brush, and to wipe off as much of the conditioning liquid as I can onto a piece of paper towel first, and THEN moisten the wafer paper petal. Good luck and keep trying! It'll click for ya soon. :)
