@@carolablue5293 I use Stevia a lot in baking... it does change the texture somewhat. Some people use monk fruit, I have never tried that. I use the stevia that is intended for baking, so it is cup for cup compared with sugar.

My research indicates that low carb baking often uses more eggs and more fat than regular recipes. There's a definite learning curve.

CAKE INGREDIENTS: 1 1/2 cups fine almond flour 1/4 cup cocoa powder (4 Tablespoons) 2 1/4 tsp baking powder 1/2 tsp salt 1/3 cup water or milk of choice 3 eggs (Eggs can be replaced with 2 tbsp vinegar and 2 tsp baking soda) 1/3 cup granulated erythritol or regular sugar or baking stevia 1 1/2 tsp pure vanilla extract INSTRUCTIONS: Preheat oven to 350 F. Grease 12 muffin cups or place cup liners. Stir all ingredients together very well, then spread into the muffin cups. Bake 14 minutes or until a toothpick inserted in the center comes out clean. Let cool completely before frosting. FROSTING: 1/4 cup butter or vegan butter or coconut oil 1 1/2 - 3 cups powdered sugar, or erythritol for keto 1 1/2 tsp pure vanilla extract 2 - 4 tbsp milk of choice
