Hey Camcam! Here's the deal with soaking fish in milk. If the fish has a strong smell, soak it in milk for 4-5 hours to allow the milk's proteins to rid the fish smell and thus your fish will taste much better and fresher. However, if you properly handled your fish, shark or not, from the moment it's caught, it won't be a problem. Best practices are as follows: Bleed your fresh caught fish; gut and gill your fish; get your fish on ice ASAP; and finally, vacuum bag your fish for freezing or wrap in a paper towel while placing it into the refrigerator for eating within 3 days max. If you follow these best practices, none of your fresh caught fish will smell. 😀

Hi Susan. I wouldn't have a problem with that, just make sure you don't overcook the tuna (ideal at 130F). There are some people who only eat tuna raw or seared on the outside and raw in the middle. Our household doesn't mind cooked tuna!!

The Man is spot on about limited ingredients. I had a small tin of tuna in oil with cracked pepper. I cut about six slices of red onion, rinsed them under tap water and diced. Also cut six slices of tomato, removed seeds and diced. Add all to small bowel, add chilli flakes and some garlic powder. Add the only creamy stuff i had in the fridge. Garlic Aioli.

Man, that saw needs to be replaced with a reciprocating stainless steel saw blades for ultimate clean cutters for future use. That saw blade looked rusty a bit. Great video!

I like to smoke yellowtail pretty much the same way you smoked the tuna belly then will add yum yum Sauce to it with Chopped salary you chop it all up,smash it up good Serve it on Ritz crackers

AWESOME recipe!!!! I had a bro give some yellowfin bellies and this recipe came out PERFECT! They hit 140 a little faster than yours, probably because they were thinner. Unbelievable taste with brie cheese and crackers!
