Jesus said "as OFTEN you do this in remembrance of me" did he give the disciples a specific day to remember him .Did the disciples think as it was Passover night, then they must only do it on passover. If you go by what Jesus said "as OFTEN you do this" what does often mean, it means you do something regularly. For instance I go to the supermarket often meaning I may go a number of times in a week. Or someone may ask me if I go to a certain place, I will say I go there often, it could mean I go once a week or more. People say they go to church often by which they only go on Sunday, but others may mean they go 2-3 times a week. There is no set day or time when to take communion in remembrance of what Christ has done for us, that would be legalism.
