What do you think about the sake sets that use a candle to heat the sake??
@sloppydom
@sloppydom 4 ай бұрын
That's a great question! Thank you! Actually, I've never used anything like that for sake, but they seem inexpensive, so why not give one a try. I imagine you just would need to be careful as the tokkuri gets more empty that the sake doesn't over heat. Try one out and let us know!

Yikes. I'd be careful warming sake in a ceramic tokkuri in the microwave. Earthenware tends to like to explode from time to time in those things.

Perhaps I've been lucky🤞. I haven't had any problems as of yet. You raise a good point though. It's probably not great to leave one in there for too long. Interestingly enough, I recently discovered that you can actually fire ceramics in a microwave, with the right tools and technique.

Thank you sir! Very informative and well put together video. I was googling how to warm sake at home and your video popped up in results. My method was basically the hot water bath but I don't have a tokkuri. I will need to purchase one. Instead what I did last night, was I used a large glass and submerged it into the bath. Then I poured that into my drinking vessel. It worked okay but not great. Also not even sure it was a good idea putting a normal drinking glass into warm water.

Dang. Never thought of using my sous vide machine for this! A few years ago my wife and I and some friends were at an Aikido seminar in Chicago and at the after dinner party they served warmed sake. Books: Sake Handbook, by John Gauntner; The Book of Sake: A Connoiseur's Guide, by Philip Harper. Brands: that a little tricky. There are so many. The Sake Handbook actually has a lot of recommendations. Dassai is a unique brand in that make only Junmai Daiginjo-grade sake. May I ask what country you are in? Not all brands are equally available.

I liked this, quite informative. But don't heat glass, and then pour cold sake in. Good way to bust the glass. Additionally, I think a good video would be opinions about Local "Japanese" restaurant's Sake. Taste, heat, presentation, and service. I've had plenty of sake and usually they are "okay". Most are heated too much, and some are just awful to the taste. Which is unusual, because there is just "sake" on the menu. What type?! and how can you distinguish between different types.
@sakegeek2707
@sakegeek2707 4 жыл бұрын
Thank you for the comment and suggestion. My sake was not cold, so there wasn't an issue but that is a good caveat. Thank you. As to your question, I think we've all been there. We order sake from a menu not knowing what to expect and we wind up being underwhelmed. The short answer is to look for "ginjo" on the menu. This is a classification for sake made with highly polished rice. It takes extra care to make it, so you are getting an premium product. However there is loads of good sake that isn't "ginjo" (吟醸 ), but that is the short answer. I'll consider an episode on the topic. Thank you for the feedback
