Can confirm that this is a simple recipe that tastes absolutely delicious! The only thing I added was a little vanilla extract. For people that have a heavy sweet tooth they can use a bit more sugar, but for me it was perfectly fine on it’s own or with a scoop of ice cream 😋

Traditional Torta di Mele recipes don’t typically include honey (at least in Liguria). However, you could certainly add a drizzle of honey on top, or even incorporate it into the batter. Experiment and see what you like best. Let me know how it turns out.

@spiceitup888 it was delicious and fun to bake, though my bread pan was leaky, and it was impossible to get the cake out cleanly, so we just had to scoop it out with a spoon. It was very delicious with vanilla ice cream, and all of it got eaten. Thank you for making a simple and easy to follow tutorial.

I made this and though it's good, my dough at the end didn't look like yours and I weighed everything out just like you. I saw other recipes for Italian Apple Cake and they had a little salt and vanilla.

Thank you so much for trying my Apple Cake recipe! I'm glad you enjoyed it, even though your dough didn't turn out exactly like the video. Can I ask how it did come out, exactly? I don't add salt to the recipe because I use salted butter. However, you can use unsalted butter with a pinch of salt, as mentioned in the description. I also don't use vanilla extract because I find that the natural sweetness of the apples, the abundance of lemon zest, and the richness of the butter are enough to flavor the cake. But feel free to add a dash of vanilla extract to your dough if you'd like :)

You can definitely use a 9-inch tart pan. The base could be a bit thicker, but it should still taste great. If you feel that the base is too thick, you could use a bit less dough and use the leftover dough to make one or two small jam cookies on the side😋 As for the apricot jam, I usually use Crofter's organic or Bonne Maman, but any apricot jam will do. Ciao! Thanks for watching my video! Regarding your comment about mixing eggs and sugar, it's definitely possible to achieve a light and fluffy texture by beating them together with an electric mixer. The key is to beat them for a good amount of time until the mixture is pale and thick. Also, make sure to use room temperature eggs as cold eggs can take longer to beat. Also, a good electric mixer is essential for this step. I hope this helps. Let me know if you have any other questions. Happy baking!

Thank you for your feedback! Cooking times can vary depending on your oven, so it’s possible the cake was baked a little longer than needed, which can affect the moisture level. The type of apples you choose also makes a difference, as some varieties release more moisture during baking. Many find that the cake gets even moister after resting overnight. This looks wonderful, thank you and will try it this week. Two questions: 1. European or North American baking powder? The European is far more powerful, why I am asking. 2. Wouldn't preparing the apples first be better, otherwise the baking powder is already activated? Can good toss with a little lemon juice to keep apples from browning.

Thank you for your comment! Regarding your questions: 1. Baking powder: I actually use North American baking powder for this recipe. I've found that it's quite powerful and I normally use 2 teaspoons of baking powder in place of 1 sachet (16g) of lievito per dolci (Italian baking powder). 2. Preparing the apples: You're absolutely right about the baking powder activation. However, I've found that slicing the apples just before baking works well for me. It doesn't take long (without filming!), and I like the freshness it adds to the cake. I also heard that American baking powder reacts in two phases: once when mixed with wet ingredients and when heated. No problem preparing the apples ahead of time, tossing them with a little lemon juice, which I do in my another video "Nonna's Secret Apple Cake". I intentionally not using lemon in this recipe as I want to feature rustic taste of apple with rum and cinnamon. In any case, the best approach depends on your personal preference.
