I ran across this video a while back and started doing burn and turn on my ribs. Absolutely got insane results with bark and flavor. 💯my very favorite way of cooking ribs. Huge crowd pleaser. Love the channel and methods of cooking.

Should have done it with simple ingredients and no extra sauce or at least the same sauce so that they are comparable😔hard to compare 2 completely different flavors when you want to compare the way the meat is cooked versus completely different toppings, buns, and sauces

Do you have to wrap them and what does it actually do?

Wrapping basically braises the meat and helps tenderize it and retains moisture. It can also help speed up the cook time. But you don't have to wrap if you don't want to.

I greatly appreciate you demonstrating the benefits of the hot n fast method, this has been a natural progression from low n slow for me, the best briskets I’ve done were on my Gateway Drum, I’ve rested meat longer than its taken to smoke on my Gateway 😂👍

How long did you have the pit heating up before it stayed strong at 300?

It's usually about 20 to 30 minutes for the temp to level off at around 300.

Nothing wrong with white smoke. It's caused by the fat from the meat dripping on the fire. What you don't want to see is black smoke.

Blues hog Smokey Mountain bbq sauce is my favorite, but man, yall need to keep coming with these videos. I love to see food on the uds. I usually use blues hog briquettes but tomorrow I'm going to get a bag of the lump and see how that goes

Just curious why you did not run a half pan water pan, then spin the rub roast every 20 Minutes or so between over the water pan and the coals?

You can absolutely run a water pan and give the meat a spin every so often if you like. For this video, we just decided to run the meat directly over the coals.

I’m appreciate a demo of the drum running at 250, when I post pictures of my Gateway running a 275, I get negative feedback about not running at 300+ my response: the Drum is versatile enough to cook at different temperatures 👍and different setups

No water pan or deflector needed! The drippings from the ribs on the coals provides plenty of moisture.

Looked like one of those Weber wax fire starter cubes. About 5 bucks on Amazon for a decent sized pack. Work great.
