1 block tofu, crumbled in chunks, 2T oil, 2T cornstarch, with spices to taste. Bake for 20 min at 250 Celsius = 480 Fahrenheit, flipping halfway through bake time 💜 Thank you for the recipe 🙏 I love to use medium firm tofu that's been frozen, thawed, then squeezed of excess water. Super delicious! Highly recommend.

It's better to make and eat fresh. But once cooked, store in the fridge and eat within 2 days.

This is a good idea to keep in mind if I ever run out of my other ingredients. I currently make a gluten free tortilla for my mother (who's gluten intolerant) that's just buckwheat flour, oat flour, psyllium husk powder, salt, and some hot water. They're pliable right out the pan, can be refrigerated, and will get pliable again as long as you reheat them before making your wraps or soft tacos. It's been a game changer for her meal times!

@@inbark7809 For about 4 tortillas I do half cup oats and half cup of buckwheat groats (mill them both with a coffee grinder, don't like the predone stuff) and a tablespoon of psyllium husk powder with a pinch of salt. Mix then add a tablespoon of oil and about half cup of hot water ( I don't measure, just know when it looks right) and work it til it's dough consistency/no dry spots. Separate into the equal portions, roll out between parchment paper, fry on either side and done!

Is there an alternative fliur that can be added to the fonio flour instead of the self raising flour? I want to avoid wheat entirely

I haven't tried it with any other flour but you can experiment with other gluten-free flour options such as almond flour, teff or buckwheat flour. It is likely to affect the texture though.

I tried it with a finer coconut, almost like a flour and it didn't rise as well 😭 It wasn't sweet enough for me but I'll make a frosting for it like you did

@@maddyb4208 did you replace the self-raising flour entirely with the fine coconut flour? Or just the desiccated coconut? The heaviness of the coconut flour, and the fact that it needs a lot more moisture, will unfortunately affect the rise. Hope it tasted okay with the frosting!

thank you! Yes I baked them at 250C the whole time. I considered lowering the temperature halfway through but I found they baked sufficiently well with high temp and short bake time.

It’s a combination of spices: cinnamon, nutmeg, star anise, cloves and ginger. You can find a jar of mixed spice in most supermarkets or you can create your own spice blend 😊

Yes, oats can be eaten raw. The flour here is just regular oats blended until fine.

Yes the waffle maker is pretty powerful. In West Africa we have other snacks that include beans prepared in a similar way (ground without cooking) and deep fried for a couple of minutes. As long as the heat source is powerful and it gets piping hot, the beans will cook.

@@ewelinahelenakulas1287 ah okay. Perhaps you could try partially boiling the beans first and see how that turns out. I suspect if the beans are too soft then the waffles would fall apart, so boil for less time than you normally would. Lovely to have someone from Germany watching 😊❤️

Yumm. Interestingly, thats how i cook basmati rice as well, which i kind of just came to through trial and error after burning it MANY timrs when I was younger. I feel validated haha. Definitely saving this video!

This looks very nice! I tried to make a baked carrot cake a couple of weeks ago that didn't rise as much as I would have liked, but I can imagine from these ingredients that the lack of rise wouldn't matter, it would just be a different kind of texture.
