I have a oatmeal raisin bread that I have been baking in the bread machine. Now I want to try dough and bake it in my oven. Any special directions on how to handle the raisins? Thank you and happy November 1. I forgot to mention that after I add the raisins most of them stay on the bottom of the pan and do not distribute throughout the loaf. Any suggestions? Thank you again

@@larrygilbert2853 yes I do! Easy trick? Put the raisins in a small bowl and add a tiny bit of flour. Shake them around so they are lightly coated in flour. They will distribute much better.

@ I do that but the dough is not absorbing the raisins. The raisins are dry and very firm. I wonder if I soak them briefly and dry them and then flower if they will work better. I am using a different brand red machine, too. I am going to start using my Zo more

@jeanegard It’s kind of a long story!😜 I had a Home Bakery Supreme for 20 years, then it died so I got a Virtuoso Plus in summer 2018. I loved it and my skills and recipe creation really took off. My dad found an old Oster bread machine in the garage and asked if I wanted to play with it. I cleaned it up and began to use it. I loved having two bread machines because I could make more dough at once-time and energy (and clean up) efficiency are kind of my thing. What I didn’t love was the Oster! It didn’t have the rest in the beginning, it was vertical with one paddle (yuck!), and just didn’t make dough as nice. I said to my husband, “It’s so nice to have two bread machines but I wish I had another Zo instead of that Oster! Hanukkah came and my sweet hubby presented me with another Zo!!!! I had three bread machines until the Oster danced off the counter and into my arms. I had to stand there until it finished the dough course, then out to the trash it went. I waited several months until there was a really good sale, and bought myself a third Zojirushi Virtuoso Plus. I have “baking” days and make three loaves/batches of dough all at once. It’s very helpful and time efficient, but I have to stagger the times so I don’t have more bread to bake than ovens. Only one mess on one day! I also have a Zojirushi Maestro-a one pound machine so I can help my bread friends with smaller machines use my recipes.

@@krism2746 Sometimes the dough could have been too wet or too dry. That wasn’t what happened here. Honestly, it happens because the dough landed that way, slightly uneven, went through a last rise, and baked that way.

@patkeys3652 I’m so glad you like it! Funny thing about that recipe. I never made, bought, or ate white bread growing up or now. I couldn’t understand why anyone wanted to make it. I tried all the popular white recipes and they had no flavor. My bread friends kept begging for a white bread recipe that had the soft texture but also had flavor. That’s the genesis of this recipe.

Hi Ellen your comparison was amazing thank you. Many years ago I made bread by hand (as far as I know the machines were not available here in 1972) and tried many recipes with different flours and yeast. Bread flour was the most successful but there was a huge difference when I tried fresh yeast from the bakery. It was a breakthrough. But once I returned to full time work I stopped baking bread😢. You have inspired me to try a machine and I baked my first loaf this Tuesday, it was lovely. Will be trying Italian next. Here in U.K. high gluten flour is more than twice the price of all purpose flour so I will experiment once I am a bit more experienced. Thank you again best wishes Pat from U.K.

Hello, Love your videos! I just purchased a zojirushi virtuoso and I’ve made a couple loaves of bread. However, my zoji has a horrible chemical like burnt plastic smell that destroys the taste of the bread and stinks up my house. Is this a problem that you have ever experienced with a new zoji?

I'm full of questions today: WHY are the Honey bread and the Raisin Bread in the recipe book numbers 3 and 4 not compatible for timer? Butter is the only perishable item and you can leave it out on the counter... Will be trying my first loaf in a few minutes. Thank you so much for all your wonderful instructional videos.

@@conniephillips840 I’m not at home so I can’t look. I wouldn’t use timer for anything because it means you won’t be checking your dough consistency at 5 minutes into kneading. I would say there is a75% chance of failure.

Just took this loaf of bread out of the oven. A beautiful loaf. Cooling now. Can hardly wait to slice. I will slice tomorrow morning to get two slices for breakfast. Don’t wait so long to slice !!! Cool for three hours, slice, freeze. It will start to get stale if you wait until tomorrow!!!! Freeze within 5 hours of baking.

Since I write my recipes in grams, I had to find a recipe in cups to show how to convert. The only cookbooks I’d recommend are from King Arthur because they give gram weights. I am making this today. I printed up the recipe and my machine is 2 lb and bigger. This says 1.5 loaf hopefully I can put it on 2 lbs and it will be ok. I did buy a scale from Amazon and will start using it today.

@@TheKimichan if you have a one pound Zo, just cut in half. It’s a two pound recipe. 540 grams of flour is 4 cups. Half would be 2 cups. I’m a little confused about you saying it would be 1.5 cups. It would be 2 cups!
