A very helpful video. I notice that you mention attendants getting the side for the forks wrong by mirroring - this is quite amusing to me as a British person, because (unless perhaps for pasta) forks are only ever used left-handed, so obviously always placed on the left - even young children know this. It’s interesting to see how cultural differences can potentially cause mistakes.

It’s not necessarily because the left hand/fork usage and cultures. It’s because on a business jet, we only have access to one side of the table instead of walking around it to place the flatware. So our brains want to mirror the placement for the opposite side place setting, by mistake - not intentionally.

Most independent contractors do not generate their own contracts, the flight department may initiate this between parties but usually it’s a simple verbal agreement and confirmation. Independent contractor is another term for freelancer. If the client uses your services through a staffing company, the contract is between them and the vendor. I hope this information helps.

It all depends on the flight operation. Typically, it’s the CFA’s responsibility to order and/or purchase the wines. On private jets, wines tend to be high-quality wines. FBO’s do not stock wine like a store, they will hold wines for you that you provide, if needed to maintain the temperature.

Training is what is required and we are based in the United States, so requirements are quite different than other regions and we provide information on training vendors located all over the world. I worked in yachting, lots of overlap. We used to have to spray the fruit with ice cold water because of the heat. On some yachts we only did them indoors. Bananas were always devoured first. Sometimes the apples, but usually an orange sometimes and never grapes. We stopped doing them because in some ports traveling from one country to another in the med, certain fruits....and other items....are forbidden and must be destroyed or quarantined. Harsh fines can be issued. We were fined $1500 for bringing in Valencia oranges into Ibiza. $500 a pop for 3 oranges. Customs was all over yachts in the 90's, looking for contraband. And we had fruit! The horror!

Oh yes. Customs and agriculture are just as strict in aviation - all fresh fruit is required to thrown out when clearing customs (plus many other items) and they search the aircraft as well.

I worked on yachts and we ran out of blini's once and we didn't have our chef on board because of a medical emergency. So we took microwave pancakes, defrosted them in the microwave, then put them in the fridge to cool. Prepped all the ingredients and then used an apple corer to pop out the round shapes in the oancakes. Out of 4 oancakes, we got 16 blinis. Guests didn't care. They actually loved it. Our lead deckhand who owned the pancakes wasn't happy though. But the guests onew we did it and when they came back, requested it again. Sometimes you may not be able to find them in some countries and have to make your own, or improvise. Caviar on a Ritz cracker or a Garden Medley Triscuit is also devine
