I am 2.6k words in the core10k. Oddly spamming Anki is fun for me and I notice fast progress while immersing is super boring at my level and I barely notice progress. I've also improved my speed in Anki to 5 sec or less per card so I can get a lot done quick. Later on listening and grammar shouldn't be that hard if you know all the words right or is my approach bad?

You're not supposed to have immediate progress in immersion. Anki is just memorizing and anyone can memorize regurgitated information whether you can effectively use what you just memorized is the actual question and Japanese grammar and diction is an entirely different ball park than memorizing flashcards - as you've just experienced. One does not learn anything by being comfortable, comfort breeds complacency and complacency leads to stagnancy.
