Thank you for sharing. I learned my lesson. To line fruitcake pan with paper grocery bag . I wasted money time process because I didn't use paper . My fruit cake burnt. So no fruit cake for Thanksgiving 😢. Father God Our Creator and his Only begotten son Jesus Christ and the Holy Spirit Bless you and Family always amen 🙏

Ah so glad it's been useful. I posted it a few years ago now, so I should do an update. I've found it easier to dice the ginger (or at least cut it into smaller chunks) BEFORE I freeze it. :)

@@pattieccakeart, do you think I could process the jars in a boiling-water bath for 10 minutes (like making jam/jelly) so that it wouldn't need to be refrigerated until I opened them?

@@DeForestRanger hi! Sorry I've not replied earlier....yes absolutely you can. Just make sure the jars are really dry before you put the ginger in them. If left unopened, it keeps fine in a cupboard

I am so happy to stumble across your site. I have wanted a recipe for stem ginger for the longest time. My mum always made it for us and I used it often in cakes deserts even cheese platters wonderful item to have at hand. Thank you so much

Hello Heather. I've made this several times since and I would say DEFINITELY freeze the ginger overnight before you make it. I've found that if you peel and cut the ginger into cubes or at least small pieces BEFORE you freeze it, it is much easier to handle than if you try to do it afterwards. At some point I'll update the video. The last lot I made, I found that the longer it's kept, the more fiery it becomes. Was absolutely fabulous! Let me know how you get on.

@@pattieccakeart I certainly will I have this urge to run out to the shops immediately to get the ginger however have to be responsible as we are in lockdown presently 😛 but will certainly get within the next week or so. Thank you so much for your reply. Stay well and safe 🇿🇦

Most recipes call for the ginger to be boiled and drained at least 3 times before the syrup stage, to take bitterness away
