I just returned from Rincon de Guayabitos, on the beach a couple hours north of Puerto Vallarta. Went there to chill cause I still can’t fish. They have a cool thing going on the beach serving fresh mariscos of various kinds. Carts with BBQ making fresh Serandiado shrimp and fish cooked to order while your ass is in the sand and your toes in the water. Also fresh oysters, clams and cold beer. Lots of restaurants lining the beach serving full compliment of mariscos and mex food. What struck me as interesting was that roosterfish was the preferred fish for cooking, skin on. Dorado, pargo and mojarra were available as well. I’d always been told the meat of a gallo was dark and no good to eat but that’s simply not true. It’s very white, tasty and juicy. I actually thought it was better than the other fish prepared the same way especially when the whole fish was butterflied and grilled whole. Not suggesting everybody should start filling their freezers with roosters, just wondering if anyone else ever tried it?
