Can use pastrami beef instead of dried beef. Tastier and less money. Costco sells a pkg which is about two pounds for less than $15. Makes a lot of sandwiches, chipped beef and other dishes!

Another i like is plenty of pepper, after the gravy is all cooked particularly, my favorite is over mashed also over well toasted, garlic buttered biscuits I prefer the meat WELL cooked since itll be in the liquid/gravy esp

Go to a butcher shop and buy some dried beef that they make themselves. And you don't rinse or soak dried beef. You either sautee it in the butter before you add flour to make your rue or you add it after you've thickened it and simmer for several minutes.
@thegravytrain65312 ай бұрын
Thanks for commenting - I soak my dried beef because I love the taste but really don't want all that sodium. (I do the same with Spam.) If you don't mind the saltiness, I agree there's no reason to soak it.

I respectfully disagree. The dish is cooked at a temperature nearly fifty degree higher than is necessary to kill pathogens.

I have recently read that during WW1 was known as Save Our Soles. Also at some time it was known as a same old stuff. During WW2 known as s--t on shingle. Really I will eat it whatever its called. Love it. Thanks for mentioning soaking the beef. Definitly will add pepper and also a little of that "W" sauce.

That seasoned salt would give me side effects. Many of the ingredients, if not all, are excitotoxins. Use real organic seasonings.

Red pepper flakes are usually used instead of cayenne, but it's your kitchen. It matters as to when you add spices. Such as the teaspoon of poultry seasoning, because the fat in the beginning of cooking renders out the flavors from spices. That is truer more often than not.
@thegravytrain65313 ай бұрын
Sometimes I use red pepper flakes, and I love them. I'm wondering about your claim that they are usually used - can you explain? My research suggests about a 20:1 in favor of cayenne (which doesn't mean it's better - I just always assumed it was more available).
@nicelady513 ай бұрын
@@thegravytrain6531 Maybe it depends on the region. Heck, I may start using both!

Bro, I don't where you learned this, but it sure ain't gravy like my grandma made or anybody else in the south. We use sausage, 2 heaping teaspoons of flour, and milk, and salt,and pepper. Stir till it thickens. Then put it over biscuits. God bless.
@thegravytrain65314 ай бұрын
Thanks for commenting! I think you may be thinking of a different recipe - you are describing sausage gravy, not hamburger gravy. I have posted a recipe for that as well, which sounds quite similar to yours. Happy cooking!

Thanks for sharing and for the tips! Question - does the Worcestershire sauce make a very noticeable flavor? I’ve always used that in burger patties, and will be using what I have in the fridge (breakfast sausage). Thanks again!!!
@thegravytrain65313 ай бұрын
Definitely not a noticeable flavor. Simply adds salt, umami, and acid in these amounts. Thanks for watching!

I never have cooked my gravy for this or biscuits and gravy in a cast iron. It was always done in a medium or large sauce pan. I've never had lumpy gravy. Of course though we're also cooking for 4, sometimes 5 people and not 1-2 people. We poured the milk slowly and stirred it. It got thick overtime, and it was done.

@lorimoravek13165 ай бұрын
I don't think you are supposed to use a wire whisk on cast iron.
@thegravytrain65314 ай бұрын
In my opinion, just the opposite. Using metal utensils on cast iron gradually creates a smooth finish over the years. Yes, it's true that it can harm the finish a bit. But that's totally irrelevant if you're using the cast iron frequently - any finish you lose will be restored the next time you use it. Thanks for watching!

I don’t soak the beef. I cut it up and put it in with the 4 tablespoons of butter frying it slightly and then add the flour to it. I then stir the mixture of beef and fat from the butter and flour together and then add the milk. No lumps. I then season with salt, pepper and paprika. Done and done.
