I've made this for my husband exactly as you made it (added a touch of onion powder) and he LOVES it. Neither he, nor I knew to soak the beef. He was reluctant to try it, he hates salty food. But, once I soaked the beef and made the gravy he now loves it! I made it again this morning (double batch) and he was in heaven...ate 4 slices of toast covered with it. I am so grateful for that one tip...to soak the beef, so that we can enjoy it again.

@alexmccoy8167 oh my goodness yes! Get you a can, I buy great value brand it's just as good I think, make your gravy and put some out in a small bowl and add a couple spoons of corned beef an try it. It's wonderful on homemade biscuits. But it is also really good leftover on toast. Try it and let me know.

Biscuits and sausage gravy is a staple at my house. Sometimes when I am feeling frisky I put a little chicken base in the roux. I am looking to insert chipped beef into the rotation. Your approach and explanation helps. I probably would have skipped the soaking even though I know people do it. Now I'll give it a shot

When I was stationed at NAS Brunswick Maine, the admiral in residence had his chef in charge of the chow hall. The chef regularly posted a menu on a board at the entrance that used descriptions somewhat different from the navy normal. The one that made the most lasting impression was his breakfast menu that included SOS. Savory Chipped Beef in a Creamy Bechamel Sauce Over Golden Toast Points.

Wow, we grew up getting SOS and then I made it many times for my husband and daughter. That was years ago. I didn’t realize they still made chipped beef and my daughter will be so excited to know about this. Of course, she’ll expect me to make it. I have recently read that during WW1 was known as Save Our Soles. Also at some time it was known as a same old stuff. During WW2 known as s--t on shingle. Really I will eat it whatever its called. Heating your liquid before you add it into the pan will help blend it. 2 cups on high in the microwave would do it.

Your gravy is basically a Bechamel Sauce but with some cream, so i would just add a touch of nutmeg to complete it. I would also add some Dijon Mustard and some garlic powder to add just a little kick of savoriness.

I never have cooked my gravy for this or biscuits and gravy in a cast iron. It was always done in a medium or large sauce pan. I've never had lumpy gravy. Of course though we're also cooking for 4, sometimes 5 people and not 1-2 people. We poured the milk slowly and stirred it. It got thick overtime, and it was done.

instead of using the dried beef and soaking it you can use buddig brand beef and slice it the same way. In my opinion this is the best meat to use by far.

I have a bunch of tasting spoons I use. Btw, saliva has bacteria in it that contaminates food. That’s why you never ‘double dip’ your chip in a dip. Your mouth is the dirtiest part of your body because of the amount of bacteria on your teeth alone. No matter how often you brush. Do a little research. I did.

The sauce is literally boiling, so I don't see how a pathogen could survive immersion. But if your research has shown you otherwise, please pass it along to me - an old dog can learn new tricks! :)

I’m 72 years old, and learned about not dipping spoons into food when I use to baby sit. They always said, don’t feed a baby from a jar, and then put it back in the refrigerator. Because of the saliva. Anyway, I could tell you about the hazards of fluoride, margarine, canola oil, and the list goes on. But I hope you will look it up. Good luck!

Can use pastrami beef instead of dried beef. Tastier and less money. Costco sells a pkg which is about two pounds for less than $15. Makes a lot of sandwiches, chipped beef and other dishes!

@@patriotgrammy5273 It's really an easy recipe to make. First, you hard boil some eggs and then slice them. Then you make a white sauce, which is...4 TBSP OF butter melted in a small sauce pan. Then add 4 TBSP flour and wisk together with the butter. Add 2 cups of milk and stir till flour dissolves. Keep heating and stirring on stove on medium high until sauce is thick. You can add some salt and pepper to taste. Pour white sauce over sliced eggs. You can serve it over toast or biscuits.

this was a great tutorial for people that have never had SOS or have trouble making gravy. the thing to keep in mind is that salt is NOT a seasoning. It is a MINERAL it doesn't keep adding flavor as it cooks for a longer time, like a seasoning does. Salt is a flavor enhancer, levening agent, or insome cases. a preservative (for example this dried beef) to make sure you have the proper amount of salt for each person's taste and or dietary needs salt should be put on the table. I dislike a lot of slt and feel most foods have enough salt in them naturally, my kids are in between, while my husband would pour the whole shaker on all his foods if i would let him i have to limit his sodium intake per dr's orders and he pouts. i have to keep reminding him he can have less now or none later. Also pepper is also NOT a seasoning, but a Spice. and therefore should also be left on the table for each person to add for their own personal preference. this is not so much for a dietary need but just a flavor preference. Some people prefer the extra spiciness that pepper can provide, while other don't like it at all. while my husband likes a little pepper, i like a lot of pepper, and my kids would prefer none at all.

If your gravy comes out to thin, simply mix corn or potato starch with cold water mix well then add it to your hot liquid to thicken further

I don’t soak the beef. I cut it up and put it in with the 4 tablespoons of butter frying it slightly and then add the flour to it. I then stir the mixture of beef and fat from the butter and flour together and then add the milk. No lumps. I then season with salt, pepper and paprika. Done and done.

Go to a butcher shop and buy some dried beef that they make themselves. And you don't rinse or soak dried beef. You either sautee it in the butter before you add flour to make your rue or you add it after you've thickened it and simmer for several minutes.

In my opinion, just the opposite. Using metal utensils on cast iron gradually creates a smooth finish over the years. Yes, it's true that it can harm the finish a bit. But that's totally irrelevant if you're using the cast iron frequently - any finish you lose will be restored the next time you use it. Thanks for watching!

This recipe has a lack of flavor. After chopping, rinse the beef in hot water to reduce the amount of salt in it. Saute in the butter so the meat flavor is enhanced. Add the flour and sauté until lightly browned. Slowly add HOT milk. Add Worcestershire sauce as a flavor enhancer.

Instead of spending $4-7 dollars for a couple ounces of that expensive Armor beef you could easily spend $2 dollars at Walmart or your local grocer for a pack of 4 oz presliced beef....it's the exact same beef except it's not dried. ..in the sandwich meat section. 😀 Hell--buy 2 packs and double the beef and still keep money in your pocket.

This is a great observation! I use the dried beef for two reasons: (1) It's shelf stable, and (2) I buy it on sale for 99 cents. I agree that the fresh beef would taste better! (Or at least fresher!) Thanks for commenting.

MELT THE BUTTER completely and get it frothy before you add the flour. It tastes much better that way!

I learned about 60 yrs ago from my father the best way to jazz up your sauce is by adding a tabls of worchestershire sauce at end of. And I'm not sure but knowing my dad he probably used bacon fat to the flour cause he used bacon fat for everything . Also I used smoke dried beef which I can't get now because the family owned meat store closed up , so I've been using packaged dry beef by knauss which is good but I miss the smoked dry beef . Tomorrow I'm going to try another meat store and see if they have it

Interestingly, both dried beef and spam were both created on the assumption that the cook would remove some of the salt.

Yes, as refrigeration became available, the dried beef was gradually replaced by ground beef. However, the original dish was made with dried beef. Thanks for watching!
