first of all, excellent video, chef. Like u, im also khmer, and I'm also the new CDC at my restaurant, LM Social. I've been flirting with my boss with khmer "specials"...i just finally got khmer pickled vegs on the menu served with crispy confiet duck😊 Point for us lol. but bro... my dream is to present prahok to this region im in, upstate ny...also kreung!! But back to the prahok, we know its an "aquired" taste, sort of speak. in these times now where the western world is more accumulated to "different" tastes n what not, i hopefully think we can punch through with prahok now. but wait, ppl still dont like liver pate, but its a staple in bhan mi sandwiches but just not advertised...with that said, should i not mention the word mudfish paste? honestly, im more inlined to say, mudfish...y? because prahok is the real deal. love it or leave it. ur say?

Every channel that shows you how to make Pad Thai sauce seems to be all the same but it doesn't taste close to any of the good Thai restaurants I've been to. Just another basic sauce nothing special

Restaurants use high fire to make their pad Thai, giving it deeper smokier flavor. So sometimes the different flavor comes from the cooking technique. Some restaurants also use different ingredients in their pad Thai sauce, like lemon, sriracha, white sugar, oyster sauce, etc. It might taste good but does not mean it’s authentic. Authentic pad Thai sauce uses only 3 ingredients. That’s why you’ll find many channels making it similar. The distinction comes down to the ratio of these 3 ingredients. Have you even tried making the sauce before you commented?

I've made satay manny times through the years and enjoyed it in Kuala Lumpur and Singapore as well as Bangkok and Phuket.So many variations. I've settled on a version very similar to your delightful recipe but I will definitely try the oyster sauce .A terrific idea I would never thought of on my own.
