Logic Pro with a variety of plugins from Native Instruments and my own personal synths. It's all transcribed by ear, though. So there is not currently an App that let's you extract MIDI performances onto a DAW.

That's quite a task. It should be easier to mod the PC port since it uses WAV for the music. But I still haven't fixed the missing OST bug. Go to The House of the Dead Discord and ask there. There's popular modders who would know what to do
