The plastic bags impart all kinds of toxic chemicals into the spinach, why not steam it in the bowl you are going to use in the cooking process? The cooking spray, the same thing ( toxic chemicals). You could just drizzle a little olive oil into the dish and then use a pastry brush to spread it. Why not use the liquid for a smoothie or healthy drink? Disposing is extremely wasteful of natural healthy vitamins and minerals! You could use some crushed corn flakes or crushed cracker crumbs to make a wonderful crusty topping. Even some home made cheesy crackers! Yum

I've been making a very similar dish for years. I use ricotta, to which I put the spinach, mushrooms, garlic and sweet italian sausage. I also put in about a 1/2 cup of mozzarella. I don't use flour. I do put a topping on of shredded sharp cheese. Same idea, very simple, same way to make it just a few different ingredients.

Thanks for sharing this recipe. I will substitute coconut flour for the wheat flour. It will reduce the carbs and also absorb more liquid. I doubt that such a small quantity will impart coconut flavor.

I have never tried this so I can't tell you for sure. Ricotta is much firmer than cottage cheese so you might want to add some milk to loosen it up a little?

I do not sterilize my jars, because I am not canning this jam. It's a small batch that you keep in the fridge and use within a week. p.s. blackberry jam would be amazing!!!

My Instant Pot is the 6 quart size. As far as the timing, I leave the pressure to release naturally for at least 20 minutes but I have waited up to an hour before adding the flour mixture to thicken. The ingredients will continue to soften, but slowly, while on hte keep warm setting.

As long as I eat lots of fatty meat and low carb veggies, this diet has helped my diseases IMPROVE. “ Improve “ to the point that both my Hepatologist and my Endocrinologist have stared at me in amazement asking, “ WHAT are you DOING, because you are soooo much BETTER ! “ Today as part of my meal I had chicken parmigiana…….loads and loads of cheese. When I eat fried pork chops, I get THE fattiest at the table. Fatty steaks, etc. Each meal I go for the fattiest……in moderate amounts……along with very low carb veggies. It is a different way of living, but will be lifetime for me……as long as I strive for my health to improve.❤

@@carolcole570 ok, well just an FYI, this casserole has 23g protein and 20g fat per serving, assuming you use cottage cheese with 4% milkfat and full fat cheese (is there another kind??? LOL) So it might not be too far from your goals! And it is truly delicious!
