Just because people in the United States use customary units, it is so much better to provide the metric units (with customary units in parenthesis). By the way, the US has not used "Imperial units" since 1825.

If you want better tasting eggs, free range is probably the best. My cousin has freen range chickens and when we visited her, she had a bunch of eggs from them and she told me to cook them for everyone for breakfast, not only were they very pretty golden color with very bright whites, but they were very rich and tasted better than the ones I was used to at home. I ate like six eggs because they were so delicious, they were almost more like duck eggs with the richness. Store bought eggs where I live sometimes have this nice dark color, but they all taste the same because indeed, it's just coloration added by diet curated by the farmer, they're not really getting a diverse diet. But they don't taste like the ones my cousin had, I love getting actually free range eggs from people who let chickens roam, the yolks can be any color, but that distinction of whether or not they're free ranging is what does make a taste difference

Use of Fahrenheit scale makes no sense. Especially when you are talking about water. It literally melts at 0 and boils at 100 on Celsius. Literally a water scale😅

I agree to put the forks and spoons and knives face down so that when you pull them out you're not touching the ends of them. Also you won't jam a knife into the palm of your hand when you're trying to grab it to get it out if you put them face up. Put them face down people!

In my experience, when I cook the breast to 140F, the thigh is basically raw. So not sure how you got this to happen.

It seems to me the difference in the temperature of the pan and the water plays a role, not just the temperature of the pan. Assuming this was tested using room temp water, could this not be achieved at a temperature lower than 350F by using colder water?

I prefer frogging over spatchcocking - this places all the dark meat on one side and all the white meat on the other side. When you smoke the bird, place the white meat on the cooler side of the smoker (nearly every smoker has a colder side & a warmer side. You can also foil-cap the breast to reduce cooking temperature of the white meat and it helps to hold the juices in the white meat. It also makes for a great display.

Keep the cast iron pan clean and dry. Do not think that the heat sterilize your food. Some toxins are not destroyed by heat, and some bacteria are resistant to medium heat. Use temperature control or oil, fat, to prevent food sticking to the pan. Only if you're cooking for yourself or your family, then keep the cast Iron pan "Seasoned" all you want. I keep my cast Iron pan clean, and only keep it from rusting. I can fry an egg with it, without sticking, and that's good enough. Cook, learn, and think how you can do better next time with your cast iron.
