I have been doing this recipe on my Weber Kettle in an in- direct low and slow (charcoal on one side, fish on the other with the chimney above the filet) with one or two small cherry wood chunks. It's absolutely delicious. I supplement the maple sugar with brown sugar because I cannot get it where I'm from.

I'm pretty sure this clip actually comes from Season 3 of Primal Grill, not Season 1. Season 3 aired in 2010 for reference, BTW.

There's definitely some typos here, as the Satay video was the one uploaded before this, and also, Primal Grill was filmed at the Tubac Golf Resort in Arizona, NOT in California. The Alisal Ranch was however home to Steven's following show, Project Smoke, and IIRC, is the current home of Barbecue University. Hope that helps!

@@stevenraichlenofficial House favorites are the butter burgers and fireman's corn! But I recently got a smoker, so this season I plan to hit a bunch of the recipes on Project Smoke! My wife insists on smoked salmon and smoked cheesecake, so those are at the top of the list!
