Pro Tip. I live on Long Island and it's 50 degrees in November. I bought an insulation jacket to hold the temp better and slow down the pellet feed.

Cooking brisket fat side up is always the preferred method in BBQing. Fat is flavor after all and you want the fat to render out so it can penetrate through the meat all the way around for better results. Nothing wrong with cooking fat side down, I just think the other way presents better.

If you hold chicken at 150 for 3 minutes, it is just as safe to eat as 165 with 0 rest. This is off the USDA website. I take it off at 145 and let it sit for 3 minutes starting when it hits 150. The carryover cooking will make it go a little over 150 for extra security. . Definitely don't leave chicken cooking until 165. The carryover cooking will bring it up to like 175 by the time you eat it.

The initial rub down with cajun butter is sufficient! No need to baste or spray. Increasing the temp at the end helps to render the skin!

Around 3 hours to get to 170 but that time can vary quite a bit depending on the thickness of the ribs and the weather.

The best way to wrap a brisket is to not use a treager, use a real wood smoker.

Used this recipe on a 26lb turkey for Canadian thanksgiving a few weeks ago. Was the best turkey I’ve ever done. Glaze was awesome and simple. I’ve never had a turkey so juicy. Fed 18 people who loved it.

We are not sure what other pineapple cake you are referring to! If the pineapple juice is shy of 2 cups use bourbon--milk or water to make up the difference; milk may make it a tad richer, but likely not enough to make much of a difference.

I’ve soaked the pineapples over night in cinnamon and sugar, small amount of vanilla extract, either bourbon or rum usually rum. Grill the pineapple on the grill. Make some vanilla ice cream and pineapple and little drizzle of the marinate. Its excellent. You could def use the marinated pineapples in this also just to kick it up a notch.
