I remember school dinner tokens and having to wait until every other kid was already eating. I also remember the dinner lady who'd make sure I was last. All the other kids on welfare must have begged, borrowed or stollen so they could go to the chip shop for dinner.

Marco said one of the most brilliant things to me, I'll never forget it so I'd like to share it with you. I asked him, "What is the ultimate advice you can give to a beginner?" to which he replied, "To begin." I have never looked at my life the same after that. I've gone on to work in the most prestigious restaurants. I saw him a in a hotel recently, and I told him what he told me, and I asked for a follow-up to my question. I asked him, "What is the ultimate advice you can give to someone cooking a long time?" to which he plied, "To long time." A bit confused, I asked him what he meant by that, to which he responded, "I just take the action word and make it past tense, didn't work this time, cut me some slack, they will drool over anything I say I don't need substance." This is when I realized what it meant to cook and now say things like, "Remember, you're not just cooking an egg, you're breathing life into an embryo" people love this chit

That one bit is completely true.. The easiest way for most people to dismiss someone's confidence, and that they're obviously better than them, .. is to knock it down as arrogance. Most people do not like others who are better people and or performers than themselves.. They can't be bothered with striving to be the same because it takes constant effort and work, as well as in-looking, .. so they take the easy route.. which is to knock that other person down.

I will say, working in the oil and gas industry for 10 years, from ages 20 to 30 as of march, the fast paced horrors, it seems scary at first, but when you are confident, and it hits the fan, its like being on a sailboat in a hurricane. I miss it dearly.

If a 22 y/o can serve food in a 2-star restaurant and have happy guests then that really shows that the stars mean absolutely nothing at all. The name and fame of the chef is completely void and useless. What the guests want is good food and it is simply not even remotely relevant who makes it. When you go to a famous chef's restaurant you NEVER get a meal prepared by that chef, he's not even in the building. His kitchen staff can make his meal just as well as he can, and for a whole restaurant. And they are not even remotely famous or experienced or praise by the Michelin snobs. But they do make the meals that you enjoy. So take all your food snobbery and sit on it. Have a good meal, done by a good cook who enjoyed making it for you, and thank them for it. And if a chef yells at his staff: tell him he's a worthless piece of crap and leave the restaurant.

Nice to see Gordon talking one on one in a quiet setting, and not bouncing around like he was in a rubber room with a camera trying to keep him in the frame. I’ve always respected him as a chef and it’s nice to see him reveal what made him. MPW is the real teacher.

Mentorship is extremely important in the restaurant industry. Mental (and sometimes even physical) abuse can be a thing too, unfortunately. Sounds like MPW was not an easy guy to work under when he was young, but there's no doubt he left an imprint on those who worked under him.
