This is optional. A little Sichuan peppercorns can be added. However, some versions omit this due to the strong sensation. Feel free to add it though! It gives a nice twist if added in small amounts :)

Chinese black vinegar is ideal, however if a substitute is needed I’ll usually use rice vinegar. It’s not quite as good but a possible option. 👍🏼

Great question! I usually use frozen udon which is about 250g per pack and comes in packs of 5 usually. Dry udon noodles likely are less than the frozen packaging, so you may want to add more. I hope this helps and enjoy! 🙂

I would stick with thighs to avoid drying out if possible. Either works but thighs results in the juicy chicken results 👍🏼
