Question! To make the simple syrup, you use water, correct? I noticed when you were pouring the water in, it looked like the alcohol bottle. Were you just using the bottle for a rough measurement?

I do that when I make Italian Ragu’ Wich is your Sunday sauce in the States , I sauté sausage , beef, lamb and pork before I introduce the rest of the ingredients , belive me my sausage was not boiled, try it first then you let me know. I appreciate your comments🙏

Looks great! Next time try sausage this way like Moma used to make as a side dish when she made broccoli and macaroni….. Brown the sausage whole in a pan with a bit of olive oil. Slice the browned sausage into thin slices and put back into the pan. Now add red table wine, enough to cover all the sausage pieces. Cover and simmer for 15 mins. Remove cover, raise heat and reduce the wine to thicken the sauce. Serve in a bowl with plenty of sliced Italian Bread to sop up that DELICIOUS sauce! Try t, you’ll like it!

It's an art to be able to cook brisket like the pros and with the cheap offset you bought, makes it even harder. Nonetheless, nice try, at least it's edible. I'd just watch more of the KZbin videos and keep practicing. It may be worth it to purchase a better smoker, something that holds the temperature better. We don't own the most expensive smokers however, they are a step above that one you own. We own 3 Oklahoma Joe smokers, The Tahoma, Bronco and the Highland. Check those out and see what you think.

195 take it off because the temp will continue to rise, I would say never into that box that holds the temperature it holds too much heat in I believe. I've taken a piece of meat off that I thought was perfect and tender, into a cooler to "rest" and it comes out tough. Unsure why.

You could use the meat slicer and slice it very thin and add it to boiling beef stack and make an Italian beef sandwich 🥪 delicious
