You could use the meat slicer and slice it very thin and add it to boiling beef stack and make an Italian beef sandwich 🥪 delicious

195 take it off because the temp will continue to rise, I would say never into that box that holds the temperature it holds too much heat in I believe. I've taken a piece of meat off that I thought was perfect and tender, into a cooler to "rest" and it comes out tough. Unsure why.

It's an art to be able to cook brisket like the pros and with the cheap offset you bought, makes it even harder. Nonetheless, nice try, at least it's edible. I'd just watch more of the KZbin videos and keep practicing. It may be worth it to purchase a better smoker, something that holds the temperature better. We don't own the most expensive smokers however, they are a step above that one you own. We own 3 Oklahoma Joe smokers, The Tahoma, Bronco and the Highland. Check those out and see what you think.

Thank you for the advise and you are correct it is a cheap smoker , I saw the Joe smoker after I purchased this one I will work on getting better and definitely buying a better smoker! Thank you

It looks delicious but I think you cut the pieces way too thick. Slice some paper thin and I bet it would be tender and make a great sandwich!
