For all the money I'd have to spend to get all the right equipment and the proper ingredients, I might as well just fly to Spain and go to a paella restaurant. This is not a "try it at home" recipe. (He lost me at the broth; I don't have any friends in Spain to send me some.)

To be clear, I'm not criticizing this recipe; it looks fantastic! I'd love to try it someday; with all those top quality ingredients and the authentic method, I bet it's delicious! (The Basque hotel near my house in Nevada does a good paella, but I think they make their own broth... Damn, that imported seafood broth looked delicious! 😋)

It's funny; I could spend $2000US on making this dish, and my all American friends would complain (behind my back) about how there was not enough meat in it, and that it could use some more spicy stuff ("it would be better with steak and potatoes and jalapeno salsa, and less rice")... This recipe would be like "cat-food" to them.. nice people they are, but they have very hardened tastes in food... Everything has to be "extreme"!

Forse, per il funzionamento del nostro corpo al meglio, sarebbe opportuno non filtrare e tenere le fibre. Idem per la frutta ecc. I succhi di frutta e cc. infatti non sono molto ben visti dai medici nutrizionisti specie se usati molto. Sarebbero delle bombe zuccherate.

jamon is to be sliced thinly....if not, they it would be too thick as well as the slices could be slightly though. Also, what's important to note is, this is serrano...not iberica bellota...Know the differences in the characteristics of all the categories when buying a jamon, or jamon iberica bellotas...what he is slicing is the lowest level of quality for jamones...

Just set up my Garcima L-40 and getting a small smell of propane from/ around the two knobs. Wondering if this is typical with these burners or is it a defect.

skip the limited adjustment of the open close knob on the regulator and get an adjustable regulator. Then the individual knobs on each ring are just "on and off" knobs, then use the adjustable regulator to control the flame. The availability of flame heat selection is not only way more but much easier to set with the adjustable regulator.

That is correct, those platters only held a few ounces each. For a bone-in ham you will have ten pounds of edible meat.

In Spain we feed them with holm oak acorns, the bitter flavor of the fruit leaves a special flavor in the fat that I don't know what you can replace it with.

I think the mesquite beans should help give flavor. Mesquite is used in west Texas bbq. I've had the Spanish version and am interested in trying the texas variety for sure

That's interesting as that's an acorn I have not heard of. The meat tastes different than the meat from the Spanish pigs...as it would given their different diet. These in the Texas Hill Country eat prickly pear, mesquite beans, agarita berries and of course, in the Fall, Live Oak acorns. Some years are more plentiful than others and this past year they were very plentiful!
