Spicy Shrimp Hand Rolls Makes 4 Ingredients: spicy shrimp: 5 ounces cooked shrimp, chopped 3 tablespoons mayonnaise 1 1/2 tablespoons sriracha 1 tablespoon furikake 2 green onions, thinly sliced assembly: 2 whole sheets nori, each cut in half 1/2 cup cooked short grain white or brown rice 1/2 Persian cucumber, julienne (thin matchsticks) 1/4 avocado, peeled and thinly sliced, optional 1/2 small carrot, peeled and julienne (thin matchsticks), optional furikake for garnish 1. In a mixing bowl combine shrimp, mayo, sriracha, furikake, and green onion and mix together. 2. Place a half sheet of nori onto a clean surface and top half the nori with about 2 tablespoons of rice. Top rice with a slice of avocado (if using) and a few pieces of cucumber and carrots (if using). 3. Top with 1/4 of the shrimp mixture. 4. Starting with the bottom, shrimp filled corner of nori, roll on an angle into a cone, wetting the ends of the nori to get them to stick, if needed. Sprinkle with furikake. Repeat with remaining ingredients and serve.

Herb Dipping Oil over Burrata Serves 10 Ingredients: dipping oil: 2 tablespoons minced parsley 2 tablespoon minced tarragon 2 tablespoon thinly sliced chives 1 tablespoon minced dill 1 tablespoon untoasted sesame seeds 1 teaspoon crushed red pepper flakes 1 teaspoon cumin 3 minced garlic cloves Zest from 1 lemon 1 cup olive oil assembly: 2 large balls burrata sea salt flakes for sprinkling 1. Place all ingredients except oil and salt, into a heatproof bowl. 2. Place oil into a small pot and heat over medium heat, about 5 minutes or until glistening. 3. Carefully pour hot oil over herbs and spices and allow mixture to sizzle. 4. Once sizzling has subsided, sprinkle with sea salt flakes and stir. 5. Rip open two balls of burrata and place into a shallow bowl. 6. Drizzle oil over burrata and serve with crusty bread.

I made this for Christmas and it was a hit. I subbed whipped Feta for the goat cheese because it's what I had on hand. Even the people I thought wouldn't like it, loved it. Great recipe.

Parmesan Stuffed Bacon Wrapped DatesMakes 18Ingredients:18 pitted Medjool dates2 ounces Parmesan cheese, crumbled6 thin strips prosciutto, cut into thirds OR 6 strips bacon, cut into thirdsgarnishes:drizzle honeyfresh minced herbs (such as thyme or chives)crushed nuts (such as almonds, walnuts or pistachios)18 toothpicks1. Preheat oven to 400˚F.2. Split each date on one side.3. Fill each date with a few pieces of parmesan cheese and tightly seal.4. Wrap each date with a third strip of prosciutto that’s been folded in half lengthwise(alternatively wrap each date with a third strip of bacon) and seal with a toothpick.5. Transfer prosciutto or bacon wrapped dates to a rimmed baking sheet, about 1 inch apart.6. Bake for 15 to 18 minutes, turning occasionally until bacon has crisped.7. Remove from oven, cool slightly and carefully remove toothpicks.8. Transfer dates to a platter and drizzle with honey, herbs and nuts (if using). Serve.
