how much % of lecithin we need to use ? if for example i have 1L oil and 10L of water , how much lecithin i need ?
@soothingrain7522Ай бұрын
1% of the total volume should be lecithin
@alfiedunn607Ай бұрын
Therefore the 11L solution would need 110ml lecithin

Hello amazing video. Great info. A question. What is the correct ratio for mixing oil with water ?
@heald_herbs2 жыл бұрын
I mean, Correct ratio of emulsifier.
@ecv80 Жыл бұрын
I think you could say it's a triple ratio, or two ratios of water to emulsifier and oil to emulsifier

Here the ratio oil to water was 1:1 , what if there is more water than oil.? I cannot make a stable emulsion of oil in soups using lecithin and an immersion blender. What am I doing wrong?
@mdml02 жыл бұрын
You're probably using the wrong emulsifier or you're not adding enough. Lecithin from what i know has low hlb value.

Hello. I just tried this and it did not work. I used water, oils, propanediol and soy lecithin. It's still separating. Is there something im missing?
@theasoapsacademy2 жыл бұрын
I used powdered lecithin for less oil n more water. Add 0.5% xanthanum to propanediol. N then to water. Add powdered lecithin 5-10% on total oil weight. I used 3% as my powdered lecithin PC is 18% . Stir all together. Slowly add oil to water phase. Liquid lecithin is when more oil n less water. My powdered lecithin can hold 25% oil.

I have a question for whomever feels like answering. I bought some cola extract which arrived in oily form; needless to say it will not mix with seltzer. I tried mixing the oil with a bit of vodka (only about 1/2 tsp with about 1/8 tsp of cola extract) and I still see a film of oil on my glass and tiny drops across the top of the seltzer. I am using cola stevia as a sweetener (it was too sweet and not cola-y enough for me; thus the extra cola flavoring) How would you mix the lecithin (I have a liquid type) for a cola beverage while trying to retain as much fizz as possible? Or would you try something else? As I also don't want it to look unappetizing either.
@baronvonbiscuits68452 жыл бұрын
I've done the same and had a similar result with my first batch of cola, I used xanthan gum. Not sure if I got my ratios correct, have you had any luck since this original comment?
@sundial.2 жыл бұрын
@@baronvonbiscuits6845 I tried it with a little liquid lecithin, but it as still not up to my standards. I haven't tried it again yet, as I haven't had a hankering for a cola... two not so good ones were enough for me I guess.

Hydrophilic? Water is hydrophilic? Okay - never mind.
@timstim487 Жыл бұрын
hydrophilic is that part of lecithin that loves water and binds to it. opposite of hydrophpbic.

Will the emulsion separate after a while or does it stay homogenous for long?
@aliveandwell39582 жыл бұрын
It stays homogenous.
@mdml02 жыл бұрын
It depends on how stable the emulsion is. Since it's just a simple demonstration probably will separate after a few weeks especially in changing temperature environments

I wish they would show you how long you need to stir for and the heat at which they heated it to.
@mdml02 жыл бұрын
As long as all ingredients are liquid, no heating is required. How long you stir will depend on what you use to stir. A homogenizer will make quick work of this.

U need sonicator or high shear homogenizer for liposomes. No need for emulsions.
