Once all three are mixed in the same flask, how long did it take for them all to fully mix where there were no visible particles?

Put everything into a glass jar, at room temperature, close the lid and shake the jar for 10 seconds or until fully mixed, shouldn't take more than 30 seconds.

I have a question for whomever feels like answering. I bought some cola extract which arrived in oily form; needless to say it will not mix with seltzer. I tried mixing the oil with a bit of vodka (only about 1/2 tsp with about 1/8 tsp of cola extract) and I still see a film of oil on my glass and tiny drops across the top of the seltzer. I am using cola stevia as a sweetener (it was too sweet and not cola-y enough for me; thus the extra cola flavoring) How would you mix the lecithin (I have a liquid type) for a cola beverage while trying to retain as much fizz as possible? Or would you try something else? As I also don't want it to look unappetizing either.

I've done the same and had a similar result with my first batch of cola, I used xanthan gum. Not sure if I got my ratios correct, have you had any luck since this original comment?

@@baronvonbiscuits6845 I tried it with a little liquid lecithin, but it as still not up to my standards. I haven't tried it again yet, as I haven't had a hankering for a cola... two not so good ones were enough for me I guess.

Lecithin is a small and stable molecule. therefor when heated to a reasonable temperature it would probably retain its properties, so when the mixture cooled it would still be able to form an emulsion

As long as all ingredients are liquid, no heating is required. How long you stir will depend on what you use to stir. A homogenizer will make quick work of this.

At room temperature is fine. Just put everything into a glass jar, close the lid and shake the jar. Simple and easy.

Hello. I just tried this and it did not work. I used water, oils, propanediol and soy lecithin. It's still separating. Is there something im missing?

I used powdered lecithin for less oil n more water. Add 0.5% xanthanum to propanediol. N then to water. Add powdered lecithin 5-10% on total oil weight. I used 3% as my powdered lecithin PC is 18% . Stir all together. Slowly add oil to water phase. Liquid lecithin is when more oil n less water. My powdered lecithin can hold 25% oil.

It depends on how stable the emulsion is. Since it's just a simple demonstration probably will separate after a few weeks especially in changing temperature environments

You're probably using the wrong emulsifier or you're not adding enough. Lecithin from what i know has low hlb value.

Polysorbate is a single chain surfactant whereas lecithin is a broad mixture of phospholipids (which contain two fatty acid chains). I'm a formulation scientist.

hydrophilic is that part of lecithin that loves water and binds to it. opposite of hydrophpbic.
