I don't like to use chemical powders like baking powders. I will not use them. They are additives that don't need to be in the flour. They seem to have been making people expand a lot!

I use soda water (or beer) and use paprika in it. Same idea otherwise same ration of flour to cornstarch ( I guess rice flower works as well). I also let batter sit for 30 minutes so baking powder has time to act.I have also salted the fish and put in frig for same 30 minutes as it draws out some water. I'll try the vinegar trick next time.
