I used to do that when I worked in a high end french restaurant. And I hated doing that. Pressing potatoes through a very fine mesh strainer is a major pain in the you know what. But after eating the best mashed potatoes in your life, I can see why I had to do that. The most creamiest, velvety and melt in your mouth mashed potatoes in your life.

They have pulled this video off his Masterclass which is probably copy written. Maybe they think the loud music hides it from KZbin bots detecting it? That aside - we bought a tamis after seeing this a few years ago and I can attest, it’s a worthwhile kitchen tool.

My own parslip pure: Parslips,Shalotts,olivoil,time,seasalt,Burn of in a hot oven,prepare a Creme Double with white wine reduced,butter and parmesan cheese, Add the rosted parslips and let it cook for a while.Rest for 20 min and then mix. Add a little bit of vegetable stock if needed.

You should have coolled the aubergine then as you would duck confit sauted it in a brown butter just to rehead and add more color. Nice as your aubergine dish is it does look a little anaemic. A brown butter brief saute then a balsamic dressing might enhance look and flavours. Thanks 😂🎉😂

The issue of balance between talk and background music has been clearly addressed. Content, however was largely ignored. Unfortunately. This is a great demonstration and perfectly clear explanation of HOW to make pureed potatoes. How cooked should the potatoes be? Very clear. Using the drum sieve (tamis), something I have simply not seen elsewhere. I need one. The explanation of solid butter versus clarified butter was helpful. Discussion of salt and acid as flavor enhancers, with pepper in a different category, shows good, new thinking. I've been trying to minimize how much mixing my potatoes get. Chef Keller stirs and stirs, and stirs. Fascinating. Then there's this nugget: the two-finger pinch, three-finger pinch, four-finger pinch. Nice detail. I look forward to trying this potato puree, even though it will take more work than standard mashed potatoes.

If you use milk you don’t need to dilute it so much with water. Cream is unnecessary .

Love parsnips, usually combine with potatoes and rutabagas for a mash then fold in sautéed kale or other greens. Last time I brought it to a potluck it got smashed before I even had a chance to get any for myself :/ Also kinda surprised you didn't use some parsley as well, parsnips are called parsnips because they taste like parsley and they pair perfectly together.

This is a great recipe. If you'd shorten your video you'd probably get more likes/ views this should be a 3ish minute video for what's discussed. Also add measurements of some kind. Just my opinion :) Thanks for the recipe!

I have now made this twice in one month! Parsnips are the BOMB! All is do differently is add a small squeeze of HONEY! Holy Canoli- Dee-Lish! Thank you for this video recipe!!

Excellent recipe! The only thing I would do is not mention to start a blender on high with hot liquid and then proceed to stick a spoon in a running blender to taste :) Nonetheless, this look delicious.

What's the amount of parsnips to cream? 300g and 300ml..?

About 1.5 cups to 2 cups. That’s what I use for 4 medium sized parsnips. You won’t go wrong! Use a bit of honey- brings it up to a new level if you wish... yummmm!!

Your videos are completely underrated. All I gotta say is maybe tune the BGM down a few dB and maybe a little more reverb and EQ on your voice. Your videos are WAY too good to be neglected by audio burdens. KEEP COOKIN MY MAN YOU ROCK
