I have traveled outside Peru and tried different versions of Peruvian cuisine, and something that needs to be said: it's very hard to get the "real" flavor, since many restaurants do some very strange takes of our food. Just from the reaction and plating (and also that some ingredients are easier to source than others), I could tell that the first place, the lomo and lamb looked like the real thing, but the ceviche looked like some meh gentrified touristy version of it. Don't be discouraged from trying ceviche in more than one place, preferably with another peruvian, or someone who had traveled here, who can tell you how accurate each version is.

You have to come to PERU to make the real Gastronomic Tour. I was in Paddintong in 2021 and i Tried the peruvian food buttt its not the same... With all the limitations of the ingredients and spices I can say as a Peruvian that the food was pretty good 7/10 .... However don't miss the opportunity to travel to Peru, with a native guide preferably so you can generate a lot of content.

there's pork sinigang, seafood sinigang, beef sinigang and vegetable sinigang likewise there are so many adobo and so does ginataan (variety of dish and variety of sweets cooked with coconut milk). you just have to have a wild imagination as to what you want to try. Be it spicy, sweet, salty, etc and the combination thereof. And in the Filipino culture, we don't want to waste food because we cherish what God provides us. And that is the reason why we cooked just about any part of an animal (pigs, calf, and the like) and we do love to eat bitter gourd, why? because it is in the Bible and even before Christianity set foot in. In the book of Leviticus Israelites commanded to eat grilled meat (the lamb of the Passover, grilling it whole like lechon) with bitter herbs (and we have lots of bitter herbs being consumed). Jews grilled the whole lamb or a goat but we don't have lamb so we do goat lechon, pork/pig lechon and calf lechon. Since pig is cheaper of all the rest then we resort to what is economically feasible. I think the connection is cunningly present but of course it differ from Jewish traditions because they are instructed not to break any bones and ate it in one sitting with all the family members and relatives if they are small in number at midnight (just like boodle fight as we call it but at daytime, Filipino style, and we include visitors and friends) and bury what is left. Well, Filipinos never bury what is left and certainly we break bones. So there you go the similarities and differences as to where might these culture come from.
