The sauce used in lechon kawali is liver sauce. The most popular liver sauce brand here in the Philipines is called Mang Thomas. It's used mainly for lechon but you can use it at almost any dish. The kare-kare is cooked with peanut butter and you dip the dish with some bagoong which is fish paste to balance out the dish. Welcome to Philippine cuisine! You have just barely scratched the surface of Philippine gastronomy. Looking forward to more Philippine foods!

Kare Kare is ox tail, a dish with an Indian influence minus the spiciness, and peanut paste gives that nutty flavor of the sauce. Sisig is pig cheeks and ears. Lechon can be deep fried or roasted over charcoal fire. Lechon sauce is made with pig or cow liver. Filo foods are all about mixing and matching with sauce and how u serve it. Egg should be mixed once in the table, and lemon squeeze, u can put some soy sauce too or Maggi savor and u could also put some mayo along with the lime, egg, sisig, Maggi Savor, Kare kare with Bagoong or shrimp paste.
