I understand short cuts and the slow cooker, absolutely nothing wrong with that. But you have to blend the onions, thickens up the sauce AND hides it from those freaks who don't like onions.

so the rice cooker is not required, just cook some pudding rice with cinnamon sticks then stir in the other ingredients. Pretty simple.

I think it split because you overbaked it. That's what is seems like from the cross-section view anyway (looks a bit curdled). Try 40 minutes in the oven next time. Good recipe nonetheless, I never tried it with sour cream.

I like a corned beef hash but is bears very little similarity to yours. Essentially mine is a leftovers dish, and the corned beef (cut from a block rather than slices) is simply added to what would otherwise be a regular bubble and squeak, made with whatever surplus potatoes and veg one has available (and creating a surplus from the first meal being a deliberate objective!) plus capers and Worcestershire sauce. Made this way all the ingredients retain their integrity, but in particular the corned beef, which in yours was almost dissolving in the looser consistency.

Horrible. The only corned beef I ever liked was in New York delis.

Almost the same as my mum's, but the gravey is a lot thinner! She boiled the onions and potatoes together so the water was just level with the spuds and onions with the oxo already added. Then was cooked like yours just added the corned beef salt and pepper to emulsify just before Finnish. I'm gonna try your water replacement technique though. Good video of a great meal well done.
