I remember as a kid I would ask my south American mother (who has NO patience for following recipes 😅)how to cook rice. She cooked it on the stove. She'd scrub and rinse the rice and then sauté it with onion and garlic in olive oil. I got that part. She then would add enough water to the pot so that it was around an inch above the level of rice. She'd also show me her measurement of an inch. the first joint of her thumb.😊 Never sticking her hand in the pot, just showing me so as to eyeball it. When I asked for ACTUAL measurements, she gave me an impatient and confused look😂 She was right. I still make it that way.

Last few times I bought mangos they didn't ripen and got spoiled. There are many recipes for pickled mango here in Hawaii but I remembered when I was in the military my Guamanian friend's wife was eating a pickled mango so I went with your recipe. Left in the fridge overnight and they were refreshing and delicious. Thanks!

Back in middle school, my bus would come down from Agana Heights and stop at Our Lady for a transfer. There was a lady who used to sell empanadas there. I always wondered how she got her rice filling so fine and consistent. She didn't use chicken (maybe only chicken broth), but they were the best empanadas ever. She would fry them there fresh and I would always burn my mouth because I couldn't help myself trying to eat it too fast. Man those were the days.

I remember those days of bus transfers at our lady! I don’t recall seeing empanadas there but there used to be a vendor there that sold snacks and drinks! Sometimes she’ll have pickled papaya!
