If you roll the balls in the cinnamon sugar mixture before baking, you get a crispy/melty texture that is amazing!

Whenever there's a weird ingredient like this in a baking recipe my first thought isn't any of your reasons rather someone wanted cookies but they didn't have the normal ingredients so they substituted with what they had XD Sometimes you get something surprisingly good like this!
