All the right points. I've had the two-piece set for long time and have never had any issues with it. I just recently bought the three-piece set because I wanted the 13x9 dish. Now I'm well equipped with staub baking dishes.

Excellent! I love using the pieces to serve food in addition to baking in them. Sunday the large one had beans and rice, the middle one had a fruit salad. Rectangular pieces on a buffet fit better. I have two, 3 piece sets and use them all often. Thank you so much for your comment. Happy cooking!

Carnaroli rice is considered better in Italy, its seen as better quality, much like Parmegiano cheese is seen as better than Grana Padano, hence it costs a little more.

Interesting question thank you. I was taught by a true northern Italian home cook. She always said…wine is for drinking. I prefer to highlight the chicken stock flavor. That’s one of the great things about risotto, you can add and subtract to make it perfect for you! Happy cooking!

I also have 2 Staub, an 18 and a 24 with steaming adapter. They look amazing and it's my first month of cooking with them. i still don't use them for frying, only for soups and oven. I bought them especially for cooking with tomato sauce. For intense quick frying I use the non-coated Lodge.

The only 9 x 9’s I’ve seen are metal. That’s what I use for brownies. I line the pan with parchment so they come out easier and clean up is faster. I hope that helps!

I have a lot of Staub and Le Creuset cookware and love them both. You can't go wrong with either brand. They both have their own advantages. The Le Creuset is made thinner and lighter so it is easy to maneuver on the stovetop and get into and out of the oven. They also have generous-sized handles so you have plenty of room for oven mitts. Staub cookware is thicker and heavier so it absorbs heat more evenly and holds that heat longer. This makes it superb for braises and stews. The black enamel interior provides superior browning of meats and vegetables. The design of Staub lids holds in moisture better and the little bumps inside the lids rain down an even coating of liquid onto your food to keep it from drying out. I love both brands, but if I had to choose only one, it would be Staub.

love your reviews! I just got staub bakeware. They told me it can go directly from the fridge to oven too. Have you ever done that. I like to make casseroles ahead of time.

You are absolutely correct. I am an amateur who has been cooking for more than 50 years. My experience is why I share my reviews and recipes. Not that I ever need to explain myself but…My knife handling is due to two torn thumb ligaments from a boating accident. I handle my knives the safest way I can. Before you insult people, ask yourself why you feel the need to do so. Happy cooking!

That said, I bought the Mac professional 8 inch chef, 6 inch utility, 3ish pairing, and the 10.25 bread slicer...my question is...what is the best way to store these beauties? Charlemagne, thank you for your lovely comment. I use a cookbook block that I made. It doesn’t dull the knives. It’s much better than wood blocks. Magnetic strips are good also, depends on your kitchen and if you have a place to hang knives. I’m going to post a little video for you on my channel right now on how I made the book block. I do try to pronounce it correctly but my accent just won’t let me! I’ve had my Staub pieces for so long it’s kind of ingrained ya know? But whatever I call it, they are absolutely the best! I have two pieces of Staub. Love them both! But soap never touches them. Just soak in hot water, wipe it clean with a paper towel or a sponge.

I would add to spatchcock it. Yes it’s an extra step. But with sharp scissors or poultry shears (I got mine on Amazon for $17), it allows the turkey breast and thigh to cook to their desired temp at the same time and cuts the cook time. The results is juicy and tender breast and thigh meat without having to sacrifice breast meat or thigh meat. Once you get the method of spatchcock down its easy and the spine makes great turkey stock!

Hello mama Bruno you sure make a mean turkey nice & crispy. Now what do you do when you think your turkey is done & you got a bloody mess. Blood is all over the platter. Back in the oven for how long. You don't what to get any one sick. I always say go low & slow. Y'all can start it off at 400 degrees if you what to better play it safe.

The struggle is real! Using a meat thermometer in several places helps. When I think I’m close to doneness, I’ll pull it out of the oven, close the oven door and take multiple readings. I think leaving that door open is the problem. Cutting into the leg, thigh first will avoid the messy platter. Yep, back in the oven it goes. Wishing you a happy thanksgiving! It's called a ricer because it presses the potatoes into what looks like rice! One trick is to add a bit of room temperature butter to the ricer before each potato. It lubricates the ricer (making it easier to clean later), and makes it require less stirring, as the butter is already incorporated into the "riced" potatoes. Loving your videos. My great Aunt (94 years old) will always pull me aside at crunch time (just when the turkey comes out of the oven and I need to start moving on the gravy lol). This goes back to the rule of simplicity being key. You are like a modern day Julia Child. I appreciate you. Cheers!

This. There's way too many people that over complicate a simple turkey. They are usually people who don't like the taste of turkey. The only thing I do differently is add carrots and cranberries to the bottom too (I like the taste in the gravy). The best tip ever is to just keep it simple!

Olive oil! You can use those cans of really any kind of oil but I spray everything so I have those refillable sprayers.
