I think your tutorial was good but you didn't mention drying the scallops first and also I was left wondering did you just add the second two in the same used pan with the butter or clean the pan between and how about keeping the first batch warm.

Too much flipping ruins the steak. Should keep it at least 1 minutes and start flipping each sides…lower heat and base butter for another minute each side…then just turn off heat completely and let it rest for 10 minutes.

I love the spend a few extra dollars and buy your scallops from a high end market. Considering most scallops start at around $24 a pound (Costco, previously frozen) a few extra dollars means $32 or more a pound for fresh divers.

As someone who has spent over 40 years diving for and cooking scallops (those of us who actually fish them, pronounce them as "Skallups" I can tell you first hand this is not the way to cook them!
