Looks good....but for easy stuff like appams, pancakes, roti etc, id Rather just buy the batter from Indian store . Too much hassle to do it this way. For complicated dishes like ghosht or biryani then it makes sense to take the time. Sorry just my opinion

Excellent recipe! I would only add some tips on managing the appam chatty so that the batter spreads easily and cooks up as desired - crisp and lacy on the sides and soft in the centre

Like crepes but soft spongy centre and crisp around the sides.. slightly sweet.. paired with sweetened coconut milk or curries..

With chicken stew, Potato stew, egg curry, fish curry, or chicken /mutton curry/black chana curry. For North Indians Chole-Appam will be good combination.

I used a 9 inch pan in this recipe. I feel this recipe measurements will work, as this cake wont rise much. Hope it helps!!!

Not so, it helps the appam to turn soft. But you can't store the batter for too long like idly dosa batter as it gets sour by each day.

Whts the best time to grind this appam..if its fermentation is 4 to 5hrs

Best time is to start soaking rice in the morning and do the rest of the procedure and fermentation during the day. So that you can make appams at night or refrigerate the batter and use the next day. Hope my answer helps!!
