The whole notion that a part of the purpose of the restaurant is to be less detrimental for the environment is kinda lost here. Restaurants and especially fine dining restaurants are extremely wastfeul. The amount of food that is wasted a day from restaurants is absolutely insane.

As a New Yorker I’ll give you some advice, don’t waste your time or your money. If you care about doing something good for the planet go to wholefoods and donate the rest of the $450 to a person who is in dire need and can use it 1000 times better than you.

Because of your video and my daughter, we celebrated my birthday at 11Madison Park this past Monday for an incredible dinner. Enjoyed it very much!! We loved the ambience and food very much! It was an awesome experience!! We loved NYC! Better weather than Los Angeles!!!

For anyone reading this, Gauthier Soho in London (UK) is well worth checking out. It's run by a chef who was formerly Michelin-starred then made the decision to go all vegan. It's not Michelin starred but is very good and their full tasting menu is less than £100.

For me, I still have the habit of wanting something substantial and "meaty" for the main savory course; I don't know that I would've been satisfied with that zucchini dish. Your descriptions were good - don't worry about technical cooking terms, you expressed things really well - but I'd really like to know what they were using for their "butter". Maybe ask the Captain if he knows? Thanks!
