Yeah how you start in terms of style is basically irrelevant, but if you want high stats the clear choice is the highest starting level class. This way you spend less of the available souls in early game leveling up the stats they already come proficient in, so you can focus on getting any other stats where you need them to progress through later parts of the game. Around midgame it all ends up being the same no matter what class you started with, you'll find your style along the way.
