Don’t know the complete context of this… but I’ll say there’s plenty of people that play off food memories of their “local pizza they grew up on being the best.” Pizza is weird like that. I’ve heard people talk about Chuck E. Cheese like pizzerias like that. I understand people getting caught up in name brands. But dude… you’re clearly showing ignorance if you bring up cairnsprings as hipster Flour in a negative light and dismiss it for a $20 flour. That’s some 90’s pizzeria thinking that is a honestly a huge detriment to pushing pizza forward . There’s no $20 flour that can compare to the product That a stone milled flour can produce. I understand that there’s plenty of novices that use stone milled flour. But you as a great pizza maker could use the cairnsprings too. And at the end of the day you would have a lot more honor in providing a better quality product than that 20 shortcut your trying to prove

This is spoken from a dude that owns a pizzeria and can only use caputo and General Mills, but used to be able to use cairnspring mills and wishes he could still make the “worse pizza that I did before”. Or wishes he didn’t make the 20$ good bag flour I do now.

Think you for this recipe as it made me cry a bit as it tasted like a gluten pizza not a gf pizza. And best of all it passed the day old eat cold pizza test. I made one big pizza with it and it was amazing.

first of all you put the halo on low, 2nd the halo is not designed for neapoloitan pizza, its for NY stle pizza, third you need to only pre-heat stone for 5 min and make sure its rotating when you pre heat or you'll burn it like you did
