Walnut oil reduces the permeability of water and food seasonings and protects the wood surface. Raw flaxseed oil is also a good oil.

Never did it, but it makes it a hell of a lot easier if you have outlines to how you want to cut it :)

If you dont mind me asking, how often do you have to re-sharpen your knifes. They must be incredibly sharp to cut so beautifully.😊😊😊

Usually, stropping is done about once an hour. However, resharpening varies depending on the situation.
