I've been in the process of converting a cargo trailer to an itty bitty cotton candy trailer. I mounted my generator in a tongue mounted locked box. They are pricey but worth every penny to not have to move my generator again, ever! You could put yours into a dog travel cage to keep it secure and mostly out of the elements. They are very reasonably priced.

Just wondering if you were planning on expanding your offerings or are your content with what you're offering now? I am asking because i am planning to start a coffee trailer but wanting to buy a trailer big enough to expand. What are your thoughts on my buying big up front in the case i do want to expand later.

I’m happy with our offerings now. A two group has been plenty big for us to serve efficiently. It can get a little tight in the trailer, but if we had a larger one it would limit the spaces we could fit in/be harder to navigate events. We don’t offer food (aside from baked goods we get from a local baker) so if you want to cook you’d probably want more space. A larger fridge would be nice too, but we make it work!

Hey just wanted to suggest child magnetic safety locks for your drawers. You can turn them off so you don’t need the magnet while working but can flip them back on while driving. That way it’s easier to get in and out of things when working 😊 thanks for sharing your journey

Hey , starting a coffee kiosk in a mall, water supply is my issue as there is none . How much pure water do you use roughly on a busy day making expresso ? I am looking at around 300 cup per day (18g) shots

I would account for 2 5 gallon jugs daily just for your espresso machine. The pitcher rinser/sinks will be another 1-2 jugs as well. If you’re making drip you’ll also want a few gallons that will make filling easier. Good luck!

It gets a lot simpler the more you practice. It’s all about lining up your timing (15-30 sec increments) if you keep them in order & have a timer going it’s not too bad!

There are some *community style* commissary’s where you can pay by the hour. Some restaurants or bars are also set up as commissary’s, but it will be a lot of asking around until you find a place. Your local health department might have a list you could work from as well to get you started!

You must get a grinder that dispenses an exact amount = no weighing, go straight to tamping

Our grinder doses dispense the same amount each time, but weather/humidity and roast date can still have an impact on your coffee. The taste will change daily - which is why we dial in every morning. Once you weigh your first few shots and find the best taste/ratio we don’t have to use the scale for the rest of the day. It’s called dialing in & it helps with quality control on the daily so shots aren’t pulling too sour/bitter/etc.

We have a separate 5 gallon water jug for our pitcher rinser & that’s been a huge help! It’s easier to refill/replace with a full one when we’re running low. That way our sink water tank is separate & lasts us longer.

Hi Hailey, So glad I've found your channel! I have so many questions, what is the size of Hazel? I have a 6x12 so just curious what mine could potentially look like. I love that you're including the prices of your new items and existing (like what you spent on the fridge). What is the size of your serving window, $, do you love it? When all is said and done how many inches wide is your standing/working area? Espresso machine, $, is it the original machine you opened with? any issues? Do you have a relationship with your bean provider, did it take you awhile to find a coffee that you felt great about serving? Are you using your original generator or did you ever need to replace? Our trailer is 14ft long! The window was custom cut out/welded, so I can't really pinpoint a price on that. We could have gone smaller/found a window with a sliding door. That might have made things easier for us. We added plexiglass because our opening was so large, and it gets so cold in Michigan. We bought our espresso machine used. It is a La Marzocco Linea AV - still love it and still use it, but we get it serviced regularly to keep it in great condition. We LOVE our local roaster & I made sure to find one early/connect with someone we enjoyed. We work very closely together & they have helped us a lot along the way. I always suggest local & finding someone you enjoy! Our generator is the same, but we have had A LOT of issues along the way that have needed repairs.
