Soft boiled eggs will always be harder to peel, but freshness also matters, the fresher the harder.. i could recommend boiling them the day before you peel them. That way they have a bit of time to set.. and peel them under water, that way the water gets underneath the thin membrane that makes peeling eggs harder...

Hey! About the peeling, you should leave the eggs in the ice bath for 3-4 minutes, and properly break up the shell instead of trying to peel it off in one piece. It will actually make it easier
