Hello Shannon. I canned jars of salsa a couple of weeks ago, and by the way, your recipe is similar to mine. We have the same tastes :) Back to my canning comment. I canned 6 pints. The water bath worked well. They all sealed properly. I let them sit for 24 hours. Then I opened a jar, and I don't know what happened, but the salsa was bitter or sort of sour. I ended up throwing it away. I followed Ball's instructions, but I don't know what happened. A couple of things I didn't do though. I didn't boil the tomatoes to remove the skin. So I made the salsa with the skin on the tomatoes and I also didn't cook the salsa. So I don't know if that might've had something to do with the unpleasant taste. I've subscribed, and if you have any ideas on my situation and you want to comment I would appreciate it. What I'm going to do next time is follow your recipe to the "T". Thank you. Jose

Bless your heart!!!!! I hate that!!!! I just don’t see where the skins or cooking vs not cooking would do that…. Did the recipe call for lemon juice or citric acid? If so, that would be the culprit. I hate you had to throw it out. I threw out a batch of corn once. I found out it was genetically modified and we wouldn’t eat it. But it was painful! That’s a lot of work!!!! I hope your next batch turns out perfect for you. If I can help in any way holler;)

They may not have heated thoroughly when adding to the gel. Should be ok still long as the jars sealed.

Great video on your process but like the other person said, this is not American Beautyberry. You have Japanese Beautyberry.

You didn’t de-bubble your jars! That’s a huge missed step.
I try to make a recipe of food referenced from each little house on the prairie book every time i re read the books. Vinegar pie was one of the first recipes i made when i started this tradition and I loved it !

@ShannonDykstra2 ай бұрын
I keep the newest Scoby to go in with the fresh batch of tea/kombucha. I have cut up old scobys to feed to chickens but most of the time I add to the compost. Just quicker that way;) I’ve also shared scobes with anyone in need.i usually do a quick post on fb to see if anyone needs one right before composting. ;)

I canned corn and had black stuff in the lids when I opened after 6mo canned. Threw all away. Afraid it was bad

Was likely just a reaction to the lid. Happens all the time. Long as no mold on your food and smells fine you’re fine. Mold is usually fuzzy.

This is just what I was looking for. Cold canning with already cooked meat. Most cold canning videos are showing raw packed. So I’m glad to see this. I also used this idea for beans that were soaked and then cooked for thirty minutes then rested and allowed to cool. Then later I jarred them up cool and put in cool pot. They turned out great! All sealed, no syphoning, not mushy, very tasty. I didn’t want to raw pack my meat this time. But I didn’t want to cook the meat, then put into jars hot, then put in hot canner, then babysit for another ninety minutes. I love that I can let the meat cool, then put into cool jars later. I just need that much flexibility. Thanks for showing the steps to do this process!
@ShannonDykstra5 ай бұрын
So glad to be of help;) and no, the meat won’t be dry either;) I had folks say dry turkey meat cooked longer will be dry as a bone. Not sitting in all that liquid. It’s quite juicy;) and delicious! I love canning leftovers;) Happy canning!

I loved watching you make this beautiful salsa. So many others I have watched leave out so many good ingredients that their salsa looks boring and I love a full body type taste. I do add some seasonings to my own salsa like a little bit of cayenne and some cumin and I tend to go a little heavy on garlic cloves. Your salsa looks so delicious and chunky, I am going to write it down in my canning cookbook for later use. Thanks for sharing your process. May God always Bless you with good health and prosperity in all you do.
