should be 8g of water to 55g of chocolate. Her recipe called for 120g of chocolate with 20g of water which is about 20%, if my math is correct so 20% of 55 is 8

Hello there Prabha, ganache is necessary to use throughout for the best support, structure and for transportation of the cake. Try using whipped cream as your final outer coat, if you like.
